Don’t miss on healthiness this Pancake Day!

Nishat, our healthy eating volunteers, has been busy preparing you a healthy Pancake day on Tuesday 13th February. Read on for her lovely banana pancake recipe.

With Pancake Day around the corner, I thought I’d give it a go at making some alternative, and healthier pancakes which are nutritious, filling, and delicious. This recipe is actually a go-to breakfast recipe I regularly use, and is made up of just a few simple ingredients. (BONUS: It’s really easy to make):


⦁ 2 eggs
⦁ 1 banana
⦁ Handful of oats
⦁ Coconut oil

Options for ingredients and toppings
⦁ 1 tsp. flax seeds
⦁ Toasted nuts (almonds, pecans)
⦁ Berries or fruit of your choice
⦁ Sprinkle of desiccated coconut
⦁ Drizzle of honey or peanut Butter
⦁ Sprinkle of cinnamon

Banana Pancakes: Method

⦁ Start by blending together the eggs, banana, and oats in a blender or smoothie maker

⦁ In a pan, heat 1 tsp. coconut oil, using a ladle pour a small amount of the mixture into the pan, ensuring it is on a low to medium heat.

⦁ Once the edges start to brown, and the pancake bubble slightly on top, it is ready to flip over (this should only take a minute or so).

⦁ Cook the pancake on the other side just until it has a little colour, and there you have it!

⦁ Complete your pancakes with your favourite toppings.

What makes this recipe healthy?
This recipe calls for whole foods only. Whole foods are foods which have not been processed, for example, an apple is a whole food as it can be consumed in its natural form with its nutrients retained, whereas apple juice is processed, as it has the fibre removed, and therefore the health benefits are reduced.
Not only is this recipe packed with whole food ingredients, by choosing the right toppings, it supports a healthy and balanced diet. Eggs in the recipe provide a good source of protein, meanwhile, the banana and oats are a source of good carbohydrates, and the coconut oil used to cook them in provides a source of good fats; in addition, with some fruit or nuts as toppings, you are also supporting your essential daily intake of vitamins and minerals.
